Evaluate the use of ScanPro™ C5505 and ProFlavor™ C3306 in a cooked chicken wings application:

  • The addition of ScanPro™ C5505 and ProFlavor™ C3306 increases cook and processing yields in fully cooked chicken wing applications.
  • ScanPro™ C5505 and ProFlavor™ C3306 provide a “Clean Label” ingredient for use in cooked chicken wings.
  • The addition of ScanPro™ C5505 increased the viscosity of the brine allowing the chicken wings to retain more brine solution.
  • The addition of ProFlavor™ C3306 increased browning when fried for the same amount of time compared to the control.

Evaluate the use of ScanPro™ P5505 and Pork Stock P1302 in clean label enhanced pork loin application:

  • The clean label treatment had higher 24 hour yields (less purge).
  • The clean label cook and processing yields were lower than the phosphate treatment yet higher than a non-injected product.
  • A clean label enhanced pork product can be successfully manufactured using ScanPro™ P5505 and P1302.

Evaluate the use of ScanPro™ P5505 in a Sous Vide Pork application for purge reduction compared to sodium phosphate:

  • The Control, with phosphate, had the least amount of purge.
  • The Negative Control had the most purge out of the four treatments.
  • ScanPro™ P5505 + sodium bicarb can reduce purge in a clean label sous vide product, similar to products formulated with sodium phosphate.

Products: Scanpro™ P5505 Natural Dehydrated Pork Stock

Evaluate the use of Essentia ScanPro™ P5505 as a yield enhancer and phosphate alternative in pulled pork:

  • In products that contained phosphate (Test 1 and Test 2), ScanPro™ P5505 increased cook yields and processing yields by approximately 2% when compared to control.
  • In phosphate free products (Test 3 and 4), ScanPro™ P5505 in combination with Sodium Bicarbonate achieved a higher injection level and a higher cook yield resulting in a 8.65% processing yield increase.
  • ScanPro™ P5505 is successful as a yield enhancer and/or phosphate alternative in pulled pork.
