The benefits of injecting meats with high functional proteins are increased tenderness, improved sliceability and cohesiveness. Our ingredients for injection are high in collagen and have thereby excellent gelling properties. Furthermore, the consumer experience is improved as well, as the meats will be more tender and noticeably more juicy.
Furthermore, color can be intensified to boost the look of lean meat by using AProRed™. This can be relevant especially in high-injected / marinated products.
